Pokébowl' with melon, mango and avocado
Imagine yourself on the beach with fruit poke bowl in hand, because this fruity 'pokébowl' with watermelon, mango and avocado will make you glow with happiness.

Ingredients
- 600 g 1 minute basmati rice
- 1 mini watermelon
- 2 salad onions
- ½ Red pepper
- 4 tbsp soy sauce
- 2 ready-to-eat avocados
- 275 g fresh mango pieces
- 1 tbsp sesame oil
- 3 tbsp oriental spice blend for poke bowl
Directions
1. Heat the rice according to package directions and let it cool.
2. Meanwhile, cut the flesh of the watermelon into cubes of about 1½ cm. Cut the salad onion into thin rings. Remove the stem and seeds from the red pepper and finely chop the flesh of the half pepper. Mix the watermelon with ¼ of the soy sauce, the red pepper and half of the salad onion in a bowl and let stand until use.
3. Cut the avocados in half lengthwise. Remove the pit, scoop out the flesh with a spoon and cut into cubes. Halve the mango pieces.
4. Drain the watermelon and stir in the avocado and mango. Divide the rice between deep plates and divide the watermelon, avocado and mango on top. Drizzle with the rest of the soy sauce and sesame oil and sprinkle with the rest of the salad onion and the poké bowl herbs. Delicious with lemon.
TIP:
Combination tip Do you like spicy? Finely chop the rest of the red pepper and garnish the pokébowl with it.
