Crunchy Cheese-Onion Rings

  • 200 gr Mayonnaise
  • 30 gr Coarse Mustard
  • ½ Lemon
  • 3 Sweet Onions
  • 200 gr Shredded Cheese
  • 160 gr Flour
  • 40 gr Cornflour
  • ½ tsp Cayenne Pepper
  • 100 ml Sparkling Water
  • 200 ml Weizenbier
  • 2 L Sunflower Oil


  1. For the dipping sauce, mix the mayonnaise and mustard in a bow. Squeeze the lemon and to taste, add the juice to the dip sauce. Peel the onions and them into 1½ cm thick rings. Separate the rings. Mix the cheese, flour, cornstarch, cayenne pepper and (optional) salt in a bowl. Then slowly stir in the water and beer and whisk all together. 
  2. Heat the sunflower oil in a pan or deep-fryer to 180°C. Dip the onion rings into the batter and fry in portions of 5-6 for 4 minutes until golden brown. Let them drain on kitchen paper. Serve with the dip sauce on the side
